INSTRUCTIONS:

  1. Cook pasta in salted water until al dente. Reserve ½ cup pasta water, then drain.

  2. In a blender, combine spinach, basil, garlic, olive oil, and a splash of the reserved pasta water. Blend until smooth and vibrant green.

  3. In a skillet over medium heat, pour in the green sauce and stir in heavy cream. Simmer 2–3 minutes.

  4. Add cooked pasta to the skillet. Toss to coat, adding more pasta water if needed to loosen the sauce.

  5. Stir in Briati Grated Parmesan until melted and creamy.

  6. Finish with extra Parmesan.

Creamy Spinach & Herb Pasta

INGREDIENTS:

  • 1 cup Briati Grated Parmesan, plus more for topping

  • 12 oz fettuccine or linguine

    2 cups fresh spinach

    ½ cup fresh basil

    2 cloves garlic

    ¾ cup heavy cream

    ½ cup reserved pasta water

    2 tbsp olive oil
